Yardbird Southern Table & Bar: Kickin for Chicken
Hi! Sadly, this is our last Miami post but I'm sure we'll be back soon. Today, we're going to talk about Yardbird Southern Table & Bar. This is Southern food the way it should be served. The real question you should ask yourself when you come here isn't "What should I eat?" but it should be "How much can I eat?".
My answer to that is "as much as possible". Whether it's the Deviled Eggs with Chives and Smoked Trout Roe or the Swine Burger 2.0 made with a Short Rib, Brisket, and Chuck Blend Patty, with House-Smoked Pork Belly, House Pickles, Smoked Gouda Cheese, Pickled Onions, and Frisée (leaves of endives), everything on their food menu looks like poetry. Anyway, let's go talk about the food!
Okay, so I confess that I've already come to Yardbird a second time since coming for my first time. But, that just means you'll get more food pictures! This place is consistently amazing. Both times, I came for Brunch. The first thing I need to talk about is the chicken. The FRIED chicken. It's so good. It makes me tear up every time I think about it.
I've tried the Chicken 'n' Watermelon 'n' Waffles with Honey Hot Sauce, Chilled Spice Watermelon, Vermont Sharp Cheddar Cheese Waffle, and Bourbon Maple Syrup. The chicken was so juicy I almost fainted. I don't think I've ever had fried chicken that tastes this good. This chicken could bring us world peace. I know it. When I drenched my chicken in the Bourbon Maple Syrup, I got a perfect bite of sweet and savory flavor. When used in cooking, bourbon kind of tastes like caramel. So, I'm not too sure if I tasted maple or bourbon but, either way, it was glorious.
We also tried Lewellyn's Fine Fried Chicken served with honey hot sauce. I experienced the awkward moment where I wasn’t sure if I was eating chicken or pure joy. It wasn’t as juicy as the previous chicken dish but it was still full of extreme flavor. JON FACT: 5 out of 4 doctors recommend Yardbird's fried chicken.
For my main dish, I got the Smoked Brisket Sandwich with House Pickles, Smoky Tomato Jam, and Swiss Cheese on Grilled Country Bread. The bread was the best! Country bread is kind of like ciabatta or baguette with a nice thick crust. Sometimes, I wish I had a giant slice of this bread so I can just lie down on it. The brisket was refreshing. It is low in fat compared to the other cuts of beef so it's more tender, which makes it enjoyable in sandwiches. But, it is still full of collagen, or connective tissue. Slow cooking brisket breaks down the collagen, making it less tough.
